However, I decided to make believe that I was some sad little contestant on some Food Network show and try my hand at stuffed portobello mushrooms for dinner last night. Who would have thought that I could ACTUALLY make something decently edible without using a recipe?! Ha! Not me! I was impressed with myself. In fact, Justin's roommate Kris (who refuses to eat anything vegetarian or borderline healthy) sat on the sidelines and insisted I take a photo for Instagram.. stating that it was photo worthy due to the fact that I "so cleverly disguised the mushroom as some sort of potato". Thanks?... for the compliment? Anyway, this was the end result:
Admit it. You guys are totes proud, right? And I didn't even burn myself on the pan this time. HOLLER! My burn from another cooking fiasco is finally starting to heal, so I certainly don't need another battle scar to remind me to stay humble in the kitchen.
Anywho, so if I can make a deliciously edible stuffed mushroom, you can too. The #1 rule I've learned in cooking is to just act like you know what you are doing.
So, I sauteed some red bell peppers and onion with garlic first, then added it to some panko bread crumbs (in the Japanese food aisle) and added in sundried tomato pesto and mozzarella. Took the stems and gill out of the mushroom, coated in with a little sunflower oil, then threw it on the covered BBQ for 10 minutes. Bomb.com you guys. For real. Give it a try.
I even decided to go out on a limb today and cook vegetarian tacos for my mother for lunch. That's right. Cooking for the mother. The scariest thing a woman can do in her adult life... cooking for the woman who cooked for you by force all those years. Turned out pretty yummy though. I branched out and experimented with a few seasonings as well. I forgot to add jalapeno so it lacked a bit of the kick I was searching for and I had to just add a little extra chili powder. But all in all it turned out pretty tasty. Wasn't ugly on a plate either.
I sent a few picture messages to tease Justin since I was making lunch at home for my mom and not for him.
He was not pleased, and sent me a sad little photo in return of his piddly lunch. I think this means that he will be eating several slices of pizza tonight after his softball game when we go out with the team. Poor thing.
You can't tell me that's not a sad looking lunch at home alone. Don't feel too bad for him though. He has tiramisu gelato in the freezer that I'm sure could lift anyone's spirits.
So those were my most recent food experimentations. I swear I will blog about things other than food in the future, but my inner fat kid is just screaming to be heard right now, so I feel like I should comply.
